When you're entertaining, having a party sized dip on hand is always a good idea. If you were to buy packaged dips, or dips from the deli, it would cost a fortune. Here are some ideas for home made spinach dip recipes, with several variations. Unbelievably, even kids love this dip. With this spinach dip, there's one thing you can count on – there won't be any left at the end of your party.

This generic spinach dip recipe is not one of those where every teaspoon must be carefully measured. You've got considerable leeway with the amounts of the ingredients called for in the recipe. It's strictly a matter of taste preference. Use the amounts given as a guideline, adding, switching or eliminating ingredients, according to what tastes good to you. As a bonus, this spinach dip recipe is a do-ahead. In fact, letting the dip sit overnight helps marry the flavors for extra tastiness.

Here are the basic ingredients: 1 large round loaf of sourdough, or your favorite flavor About ¾ pound of fresh spinach or one 10 ounce bag of frozen spinach 2 cups of sour cream 1 cup of mayonnaise or salad dressing 1 packet of ranch, onion soup or vegetable dip mix 1/3 cup finely diced red onion chopped frozen artichoke hearts, to taste cooked, diced bacon, to taste 4 ounce can of water chestnuts, diced shaved Asiago or Parmesan cheese, to taste Fresh spinach tastes best, but a frozen bag works too. When using fresh, wash in several changes of cold water. Heap the cleaned spinach in a frying pan with a lid, using only the water which clings to the leaves. Cover and cook over low heat for 3 or 4 minutes, just until wilted. Drain well and chop. For frozen spinach, simply cook, drain and chop.

If you enjoy a richer, thicker dip, use 2 cups of mayo and just 1 of sour cream. If you have dietary restrictions, you can use low-fat mayo or sour cream just as well.

For the packet of dip mix, choose just one. Mix all of this together.

The last five ingredients are optional mix and match ingredients. You can use just one or all of them, in smaller amounts of each. Red onion adds a nice color balance and tastes good with the spinach. You can add artichoke hearts for a very rich flavor (yum!) and more complexity to your custom spinach dip recipe. Bacon, Asiago and Parmesan complement the spinach flavor. Water chestnuts add crunch.

Mix any, all or some of these right into your spinach mixture. Spoon it in to a plastic zip bag, squeeze out the air and store it overnight in the frig.

Cut the top off your loaf and hollow it out. Cut the bread into cubes. Supply toothpicks. Voila! The most excellent of spinach dip recipes!
