A Sweet Potato Recipe For Those Who Don't Like Sweet Potatoes!
Sweet potatoes are an American institution at the holiday table. However, not everyone likes sweet potatoes! To my mind, there's just something wrong with a vegetable that is cloying sweet and covered with marshmallows to boot. As a child, I avoided this dish like the plague, after a single taste test.
I've since observed, as an adult, that contrary to the apparent popularity of this side dish, there are many who agree with me, albeit far more politely than I did as a little kid. So if you're one who dislikes this nutritious vegetable, here's a sweet potato recipe for you. Surprisingly, those who do love this orange veggie prepared as usual, also give rave reviews to this delightful variation. This sweet potato recipe strikes the diner as a gourmet upscale take on the plain dish.
Although the basic preparation is the same as the traditional sweet potato recipe, there are two additional secret ingredients. They are orange juice and orange zest. Simple as that.
You cook and mash your sweet potatoes as usual. I prefer that they are as smooth as possible, but that's just my preference. Once they're mashed, add one cup of orange juice and a tablespoon of orange zest to a batch that serves eight people. Mix thoroughly, add your marshmallows and pop it in the oven for the usual time. The result is delicious.
As for the orange juice, I prefer the fresh-squeezed, no pulp version that's sold in a carton. This adds a significant gourmet taste to your sweet potato recipe. However, you can also use frozen orange juice. If you use frozen orange juice, don't dilute it quite as much as the can specifies. For the orange zest, peel your zest from a fresh orange for the best taste. Be careful to catch just the zest, with none of the white pith of the skin, which will impart a bitter taste to your finished dish.
Another variation on this sweet potato recipe uses about a teaspoon of freshly grated ginger thrown into the mix, along with the orange juice and zest.
